The menu rotates seasonally, and the chef uses seasonal ingredients to craft seasonal, plant-based dishes. Owner Brian Collins was raised in Arroyo Grande and fell in love with the food industry at an early age. He eventually enrolled in a culinary school in San Francisco and stayed on to create Ember.

The owners of Ember, a scrumptious restaurant in California Coast, are proud of their culinary talents. Almost two months before the restaurant opened, Collins was called on to assist with construction. Collins also handles a great deal of the woodworking at Ember. He plays a major role in menu changes and the politics of the kitchen. Luckily, he still manages to accommodate walk-ins and has a waiting list.
